Jello
Rainbow jello was my favorite side dish at thanksgiving as a kid. Today, I attempted to make it for the first time for my little family. I talked it up to Dot, whose favorite color is “rainbow”, so she didn’t need much convincing. I messed up on the green jello layer, so it had to be scrapped. The rest of the colors made a rather pink/red hue variation instead of a rainbow. I was irrationally upset with myself, and feeling frustrated. Dot, who was helping on a stool by my side, put one hand on my shoulder and said, “we don’t have green any more, but… it’s-okay mom!” How does she already have so much resilience in that tiny body? All morning long she kept checking, is the rainbow jello done now? Turns out seven layers take a long time to all set. When we sat down to eat, Dot’s excitement for the jello made my whole thanksgiving. She ate two helpings and kept telling us how much she loved it, “This is my favorite jello I’ve had in a long time”.
